After living in Italy for 9 years and being gone for almost 3, it is always fun to see what things strike me the most when back in town. I came up with a top 10 list of which I could have actually added many more. So I hope you enjoy the video even if it is a bit small!

OMG…it was 3.5 weeks of pure bliss! 75-80 degrees and now I am back here in Italy waiting for the snow! Thanks for commenting. I think my next one will be just about what we (more Claudio) missed about Italy!

It's about cooking healthy filling and tasty meals, cancer prevention etc. Will take notes on Italian food & wine! Was wondering if it's true that Italians put pasta water in their sauce and if so how much. Thanks!

Yes for many types of pasta, it is good to add a bit of pasta water to the sauce. I find it particularly helps with drier sauces such as pesto (to make it creamier) for example. I made a broccoli and anchovy pasta which would have been just chunks but with a spoon of pasta water it perfectly coated the pasta!
…Also do you add pasta to a pan of sauce and finish cooking in the pan? Should the pasta be about 1 minute shy of al dente?
yep you got it! But it is pretty much up to your own tastes… you really only need a ladle of water and 1-2 minutes of cooking in the pan…just experiment!
