As soon as we got to the Sovversivi del Gusto meeting I was drawn to the piadinas. Piadinas are tortilla wrap like breads most well known in Emilia Romagna. You Fold them over and can put all kinds of fillings inside like meats and cheeses, arugula, tomatoes and cheese and grill them. Kind of like an Italian quesadilla! Sometimes I use them when I make mexican food here if they are not too thick.

Well like I explained before the difference between these piadinas and the ones you find in the supermarket is the process and the genuine ingredients. These piadinas are made with flour only from the romagnola area, sea salt, and olive oil from the territory. No preservatives.  I am always hesitant with piadinas to be honest because they normally contain lard. However, one of the types here was made with extra virgin olive oil instead of lard. They were delicious and the thinnest I have ever tasted! They heated them on a cast iron grill and paired them with salumi and cold cuts! I passed on those! meats..next blog post…
